Mother’s Day Recipes for March

Starter: Spicy Tomato Soup

  • Serves: 2
  • Prep Time: 0hrs 5 mins
  • Cooking Time: 0hrs 25 mins

Ingredients

  • 1 or 2 Italian sausage
  • 1 Large onion chopped
  • 1 Large carrot/celery chopped
  • ¼ cup Long grain rice
  • ½ cup can lentils
  • 4 cups Beef broth
  • 1 clove Garlic
  • ¼ tsp Pepper
  • 1 or 2 up to you Birds eye chilli (leave in seeds)
  • 1 can chopped tomatoes

Method

  1. Cut the sausages into bite size pieces and brown them in a large pan
  2. Add all the vegetables and beef broth and cook for further five minutes
  3. Then add the rice and cook for about 20 minutes until the rice is done and the vegetables are cooked to your taste
  4. Serve with Creme Fraiche and fresh homemade bread

Main Course: Sea Bass

  • Serves: 4
  • Prep Time: 0hrs 15 mins
  • Cooking Time: 0hrs 20 mins

Ingredients

  • bag spinach
  • 4 sea bass
  • 4 medium sized potatoes
  • 2/3 carrots
  • olive oil
  • black pepper
  • sea salt
  • butter
  • pinch nutmeg

Method

  1. Cut crosses in the skin both sides of the sea bass fillets and rub in olive oil, black pepper and sea salt then wrap up in tin foil and bake for 20 mins.
  2. Chop up carrots and cook until soft.
  3. Boil the potatoes and then mash with lots of butter and olive oil.
  4. Throw spinach in the frying pan, add butter and nutmeg and cook for 3 mins.

Sea Bass dish

Desserts & Sweets: Cheese Cake

  • Serves: 12
  • Prep Time: 0hrs 25 mins
  • Cooking Time: 1hrs 30 mins

Ingredients

  • 750 g Cooking or Curd Cheese
  • 750 g Cooking or Curd Cheese
  • 750 g Cooking or Curd Cheese
  • 10 Tbsp Caster Sugar
  • 6 - 8 Digestive Biscuits
  • 75 g Butter
  • 5 Eggs
  • 2 Tbsp Lemon Juice

Method

  1. Preheat oven to 160°C
  2. Beat cheese and sugar together for 10 minutes
  3. Meanwhile, crumble biscuits with a rolling pin and mix with the melted butter. Line a large loose-bottomed tin
  4. Add eggs one at a time to the cheese mixture, beating well between each one then add the lemon juice. (The mixture will be very runny at this time)
  5. Pour the mixture over the biscuit base and cook for 35 minutes then leave for one hour in the oven with the oven turned off
  6. When cool, spread the sour cream over the top and decorate with fruit or chocolate vermicelli
