Delicious 3 Course Meal for June

Here’s a simple yet delicious 3 course menu from MyDish.co.uk; Tomato Tart, Pasta Pomodora and Chocolate Brownies. Perfect for entertaining on those warm summer days and any leftovers can be taken into work the next day for lunch!

Starter: Tomato Tart

  • Serves: 4
  • Prep Time: 0hrs 5 mins
  • Cooking Time: 0hrs 20 mins

Ingredients

  • One pack ready made shortcrust pastry
  • Small pack Red Cherry Tomatoes
  • Small pack Yellow Cherry Tomatoes
  • Small jar Tomato Relish
  • 2-3 Sprigs of fresh thyme
  • Balsamic Vinegar

Method

  1. Pre-heat the oven to around 170°C
  2. Roll out the shortcrust pastry onto a greased 10 inch flan dish or small oblong tray
  3. Turn up the sides of the pastry to make a crusty edge all around when cooked
  4. Spread the jar of tomato relish evenly across the pastry base
  5. Halve the contents of the small packs of tomatoes and cut these in half
  6. Distribute these onto the relish-covered base
  7. Add the other half of whole tomatoes to the tart
  8. Add 2-3 small sprigs of fresh thyme to the tart
  9. Place in the oven and cook for around 20 minutes on high. Serve hot drizzled with balsamic vinegar.

Tomato Starter

Main Course: Pasta Pomodoro

  • Serves: 4
  • Prep Time: 0hrs 15 mins
  • Cooking Time: 0hrs 20 mins

Ingredients

  • ½ Onion
  • 1 packet Chargrilled Chicken pieces
  • A few Mushrooms (quartered)
  • Approx 7 Chopped Sundried Tomatoes
  • ½ pint Cream (single or double)
  • A handful of chopped Basil
  • 300g Pasta (of your liking)

Method

  1. Soften the Onion in Margarine
  2. Add chopped Chicken and Mushroom. Then fry for 1 minute
  3. Add Sundried Tomatoes and fry for 1 minute
  4. Next add the Basil and Cream before heating through
  5. Meanwhile cook your Pasta
  6. Serve the sauce on top of the Pasta.
  7. Enjoy!

Pasta Pomodoro

Dessert: Chocolate Brownies

  • Serves: 8
  • Prep Time: 0hrs 5 mins
  • Cooking Time: 0hrs 25 mins

Ingredients

  • 4oz butter (preferably unsalted)
  • 2oz bitter chocolate broken up
  • 4oz caster sugar
  • 4oz walnut pieces
  • 2 large eggs beaten
  • a drop of Vanilla essence

Method

  1. Preheat the oven to 180°C and grease an 8 inch baking tray with butter and line with greaseproof paper.
  2. Gently melt the butter and stir in the chocolate. Remove from the heat and let the chocolate completely melt in the hot butter.
  3. Sift the flour into a bowl add a pinch of salt and stir in the sugar and walnuts. (sometimes I leave out the walnuts when making for young kids)
  4. Pour the melted chocolate mixture into the flour mixture and fold together.
  5. Then fold in the eggs and vanilla essence.
  6. Pour the mixture into the baking tray and cook for 25mins. Then leave to cool in the tray. Turn out and cut into squares.
